Mirchi Bhajji

  Hyderabadi Cut Mirchi Bhajji....Green chilli marinated in lemon juice and spices...coated in batter and fried to perfect golden color,crispy,spicy snack...ready in a jiffy!!! Ingredients Besan/chickpea flour 1 cup Rice flour 1/4 cup Salt to taste Red chilli powder 1 tsp Tumeric Powder 1 pinch Baking soda 1 pinch Water for mixing Green Bhajji chilli 250 gms Jeera 1 tsp Lemon juice  2 tbsp Asafoetida 1 pinch Method Slit green Bhajji chilli lengthwise and remove the seeds.Marinate with lemon juice and jeera and keep aside for 30 minutes. Marinated chill For bhajji mix,add besan and rice flour in a bowl,add salt,hing, chilli powder, turmeric powder, baking soda and mix the dry ingredients well. Bhajji batter Add enough water to make a thick batter,so that it can coat the chillies well. Heat oil in a kadai keep medium to high flame.when th oil is hot enough,dip the chilli in the batter and deep fry till golden brown. Enjoy hot bhajjis with a cup of coffee.

kara Bhoondhi and Meeti Bhoondi

  Kara Bhoondhi and Meeti Bhoondi Hot and sweet combo of Bhoondhi Ingredients For meeti bhoondhi Ghee for frying Besan/ chickpea flour 1 cup Sugar 1/2 cup Elaichi 3 Kesar few strands For kara Bhoondhi Besan/chickpea flour 1 cup Oil for frying Salt to taste Red chilli powder 1 tsp Asafoetida 1 pinch Method For Meeti Bhoondi Mix besan with water and make a batter to pouring consistency.Heat ghee in a pan ,keep medium flame.Pour a laddle of batter onto a bhoondhi laddle or grater into the hot ghee.Note that the ghee should be very hot while frying. Fry till slightly golden brown. For jeera boil sugar in 1 glass water.Boil for 10 mins after the sugar completely dissolves.The syrup should be very sticky and thick.Add cardamom powder,squeeze half a lemon into the syrup. This step avoids formation of sugar crystals. Add a few saffron strands to the warm syrup. Cheese stuffed grilled mushrooms

 Mushroom stuffed with cheese and veges...umami flavours....melt in mouth!!! Ingredients For stuffing Mushroom 250 GM's Onion 1/2 cup Salt to taste Oregano 1 tsp Chilli flakes 1 tbsp Capsicum 1/2 cup Oil 1 tbsp Grated Cheese 2 tbsp Chopped coriander 1 tbsp Mushroom stalks 1/2 cup For marination Hung curd 2 tbsp Salt to taste Red chilli powder 1/2 tsp Tumeric Powder 1 pinch Dhania powder 1/2 tsp Garam masala powder 1/2 tsp Method For stuffing Heat oil in a pan,add chopped onion,capsicum,mushroom stalks.saute till raw smell goes and cook till soft.Add cheese and cook till cheese melts. Make marination by mixing hung curd with all spice powders and keep aside. Scoop out and hollow the mushrooms .Keep the stuffing in the centre. Heat oil in a pan,coat the marination on the outer side of the stuffed mushrooms.saute in low flame ,until both sides are golden brown Serve with your favourite sauce 

Grilled veg cheese sandwich

 Cheesy,gooey sandwich filled with veges and green chutney....with bread of your choice....wait no more.... Ingredients For sandwich Dices cucumber 1 Diced tomtoes 2 Brown bread loaf 1 Green chutney Cheese slice Butter  For Green chutney Coriander 200gms Green chilli 2 Jeera 1 tsp Mint leaves 100 gms Slat to taste Ginger 1 tsp Lemon juice 1 tsbsp Method For green chutney Wash and chop coriander and mint leaves . Grind in a mixie jar all the ingredients into a coarse chutney consistency.Do not add too much water. For making sandwich Grease sandwich toaster with some butter. Arrange the vegetables on the bread slice and keep a cheese slice.cover it with a chutney spread, bread slice and grill till done. Cut into triangles and serve with your favourite sauces.

Masala puffed rice/Murmura

 Puffed rice is a favourite snack option.Adding nuts like peanuts, cashewnut make it tastier and healthier!!! Masala Murmura Add caption Ingredients Puffed rice 400 gms Cashewnut 100 gms Roasted peanuts 100 gms Fried bengalgram dal 100 gms Salt to taste Dry red chilli powder 1tsp Turmeric powder 1tsp Dhania powder 1/2 tsp Oil 3tbsp Ghee 1tbsp Mustard seeds 1 tsp Curry leaves few Method Clean the puffed rice and keep aside. Heat oil in a pan add mustard seeds,curry leaves after they splatter add all the nuts and roast till golden brown. To the roasted nuts add the Salt,chilli powder, tumeric powder and dhania powder.saute for few mins in low flame. Add the roasted nuts to the Murmura and add ghee and mix thoroughly when warm.keep in a air tight container and enjoy the masala murmura.

Veg pizza mc puff

 Flaky puff... filled with  cheese and veges cooked in pizza sauce...sprinkled with herbs makes it delectable!!!! Veg pizza mc puff Ingredients For the flaky puff  Maida 1 Cup Wheat flour 1 cup Salt to taste  Mixed herbs 1 tsp Oil 2tbsp For the stuffing Mixed vegetables  1 cup (Carrot,cabbage,capsicum) Pepper 1 tsp Chilli flakes 1 tsp Tomato sauce 1 tbsp Pizza sauce 2tbsp Salt to taste Oregano 1 tbsp Oil to deep fry Cheese 4tbsp Chopped Ginger 1 tbsp Chopped garlic 1 tbsp Method Preparation of puff covering Add maida and wheat flour in a bowl,add salt,oil and mix well till the flour is crumbly.Mix with your fingertips and don't apply pressure. Medu vada

Get's it's name from Maddur Town in present day Karnataka.....made from urad dhal....can be had as a snack by itself , pairs excellently with sambar, curd,chutneys....the list is endless!!! Ingredients Urad dhal 1 cup Salt to taste Pepper powder 1 tsp Oil for frying Method Soak urad dhal for 3-4 hours and grind to a smooth batter.Do not add lot of water while grinding, Just sprinkle as required.Batter should hold shape for vadas.sprinkling cool water increases its softness by reducing heat produced in the mixer.Batter should be in white  color and fluffy. Add salt and pepper powder to the batter.Heat oil in a Kadai,keep low to medium flame. Take a small amount of vada batter in your palm and pat it into vada shape,make a hole in the middle with finger  and gently drop in oil from sides.keep a bowl of water beside you,to wash your hands inbetween,if vada batter sticks to your palm. When golden brown on both sides,your vadas are ready to serve.

Veg hakka noodles

Noodles.... twisted and tossed,saucy threads of joy!!!Its a welcome dish when served as any meal, so here's  veg hakka noodles , let's get started.. Veg hakka noodles Ingredients Mixed chopped veges 1 cup (Carrot,cabbage, Onion, capsicum) Oil 1tbsp Salt to taste Pepper powder 1 tsp Soya sauce 1 tsp Tomato sauce 1 tbsp Chilli sauce 1 tsp Hakka Noodles pack 1 Method Chop veges lengthwise,as thin as possible and keep aside. Chopped veges Heat oil in a wok add the veges and stir fry them on high flame ,cook for few mins ,veges need to retain their crunch (don't overcook).Add the sauces , salt and toss it on high flame. Boil noodles in a large pan with 10 cups water,bring water to boil and cook noodles for 10 mins until they are Al dente.Drain excess water and keep aside. Mix the boiled noodles with sorteyed veges,toss for few mins,mix thoroughly and serve hot!!
