Badusha/Balushahi

 Flaky,melt-in-mouth Badusha sweet dish  Ingredients : For Badusha: Maida/Allpurpose flour 2cup Salt 1pinch Ghee 3tbsp Fresh Curd 3tsp Baking soda 1/2tsp Ghee/oil for frying For sugar syrup: Sugar 2cups Saffron 1 pinch Lemon juice 1tbsp  Method For Balushahi dough: Mix maida with salt,Baking soda, curd,Ghee into a curmbly dough with adequate water. Donot over knead the dough.Rest the dough for 30-45mins. For sugar syrup: Boil sugar in a thick bottomed pan with 1 glass water.Boil in medium flame for 20 minutes. When sugar reaches single thread consistency, add Saffron, lemon juice.switch off flame ,keep syrup warm .Addition of lemon juice prevents formation of crystals in sugar syrup.  Heat oil/Ghee for frying .keep very low flame . Divide the badusha dough into small portions ,press In center.Fry the balushahi in very low heat.Try and maintain the temperature in the same low heat. When Badusha turns light golden brown remove and soak in warm sugar syrup. Remove and serve after 10 minut
