Beets soup

  Beets soup Beets soup made with winter vegetables like beetroot, carrots  🥕 cozy warm soup for chilly winters are great ways to boost Immunity. Tasty homemade soups are perfect binging options ,filling and healthy!!! Ingredients: Beetroot  1 small Carrot 1 small Onion 1 small Bay leaf 1 Garlic 5 cloves  Butter 1 tbsp Salt to taste  Pepper powder 1tsp  Peppercorns 10nos. Tulsi/Basil leaves few (optional) Water as required  Coriander stem few  Method: Chop the veggies  Heat a pan, add butter ,when butter melts add garlic,bayleaf stir few minutes until raw smell goes. Add onion, sauté until pink. Add beetroot, carrot,coriander stems,Peppercorns sauté few mins. Add 2 glasses of hot water.cook with lid closed,until veggies are soft.Add Tulsi leaves now. Mixed veg sweet corn soup

  A warm bowl of sweet corn soup with mixed veges.... comforting,filling and therapeutic for cold winters. Ingredients Mixed vege 1 cup (Beans, carrot, cabbage) Sweet corn 1/2 cup Coarsely ground sweet corn paste 1 tbsp Corn flour 2-3 tbsp Butter 1tbsp Salt to taste Pepper powder 1 tsp Bay leaf 1 Method Heat a large pan add 1 tbsp butter,add bay leaf,add the veges.Saute for few minutes,add sweet corn and saute for 5minutes.keep medium flame. Now add 1 litre water into the veges and bring to a boil. Simmer for 10 mins till all the flavours of the vegetables are released into the water.It will become a vegetable stock. Add the sweet corn paste to the vegetable broth.This enhances the sweet corn flavour of the soup. Boil for few more minutes.Add Salt to taste and pepper powder,mix thoroughly and adjust the consistency of the soup with water if required.Mix corn flour with some water and make a slurry. Pumpkin soup

 Warm and rich pumpkin soup...tastes comforting on a rainy monsoon eve!!!! Ingredients Red pumpkin 250 GM's Onion 1big Bay leaf 1 Salt to taste Butter 1 tbsp Garlic 2 cloves Pepper powder 1tsp Method Clean and dice pumpkin into cubes. Heat a pan add butter,keep medium flame,add onion,garlic and bay leaf  Saute onion till they are translucent.Add the pumpkin and saute until raw smell goes. Add a glass of water and cook till pumpkin and onion turns soft. Remove bay leaf and puree the pumpkin into a smooth consistency. Simmer the pumpkin soup for few minutes again,add the bay leaf and salt.switch off flame when it starts to simmer. Add a dash of pepper powder and serve the pumpkin soup warm.
