Aloo methi paratha

 Aloo Methi Paratha...first winter dish,fresh Methi leaves chopped and mixed with atta ....stuffed with spices and potato filling!!! Nutritious Paratha on the go!!! Ingredients Whole wheat flour 2cup Salt to taste Water for kneading Chopped methi leaves 1 cup Ginger garlic paste 1tbsp Garam masala powder 1 tsp Ajwain seeds 1/2 tsp Chopped green chilli 1 tbsp For aloo filling Boiled potatoes 1 cup Salt to taste Red chili powder 1 tsp Ginger garlic paste Garam masala powder 1 tsp Amchur powder 1 tsp Turmeric powder 1 tsp Method Mix whole wheat flour with spices and water to make a soft dough. Let the dough rest for 30 minutes. For the Aloo stuffing ,mix boiled potatoes with all the other ingredients and mash to coarse dough. For making the Paratha,roll out a small roti,fill it with some aloo stuffing.Close  and roll out the Paratha slightly thick. Muddhakudumulu/Raw rice rava cutlets

 Steamed raw rice patties with the goodness of coconut and Bengal gram dal..... ideal cereal pulse combination!!! Ingredients Raw rice rava 1 cup Water 1 3/4 cup Salt 1/2 tsp Oil 1 tbsp Grated coconut 2tbsp Soaked bengal gram dal 2 tbsp Method For making raw rice rava Wash and soak raw rice for few minutes.Drain the water completely and dry the rice grains on a kitchen towel until fully dry.Powder the rice in a mixer ,to a fine rava consistency.This is your rice rava. Washed and dried raw rice Measure 1 3/4 cup water in a kadai.Add water, salt and oil, Coconut,soaked bengal gram dal.Bring the water to a slight simmer. Pour the rice rava,keep low flame and stir well until they are thoroughly mixed.No lumps should be formed. Cook till water evaporates and the mixture will be like uppma consistency.swtich off the flame.This process takes aroumd10-15 mins. Ragi Idly stuffed with onion chutney

Ragi orFinger millet....high fibre,abundance of iron makes it a heathy option. Ragi idly stuffed with Onion chutney is a hassle free recipe and can give a stamina packed start for your hectic days.    Ingredients for Idly Idly rice/parboiled rice 1 cup Urad dhal 1/4 cup  Ragi powder 1/2 cup Salt 1 tsp Soaked Methi seeds 1/2tsp Ingredients for onion chutney Onion 3 Dry Red chilli 7 Cococnut 1 tbsp Jaggery 1/2 tsp Salt to taste Tamarind juice 1 tbsp Oil 2 tbsp Method to make ragi idly Soak rice and urad dhal seperately 4-5 hours.Grind them in a blender along with some salt and Methi seeds into a smooth batter.Let the batter ferment overnight.The fermented batter is your basic idly batter.
