Beets soup

  Beets soup Beets soup made with winter vegetables like beetroot, carrots  🥕 cozy warm soup for chilly winters are great ways to boost Immunity. Tasty homemade soups are perfect binging options ,filling and healthy!!! Ingredients: Beetroot  1 small Carrot 1 small Onion 1 small Bay leaf 1 Garlic 5 cloves  Butter 1 tbsp Salt to taste  Pepper powder 1tsp  Peppercorns 10nos. Tulsi/Basil leaves few (optional) Water as required  Coriander stem few  Method: Chop the veggies  Heat a pan, add butter ,when butter melts add garlic,bayleaf stir few minutes until raw smell goes. Add onion, sauté until pink. Add beetroot, carrot,coriander stems,Peppercorns sauté few mins. Add 2 glasses of hot water.cook with lid closed,until veggies are soft.Add Tulsi leaves now. Strain the veggies from the broth. Remove bayleaf, grind the soup mix finely. Strain the soup mix, add to a pan along with the broth. Adjust the consistency of the soup with water,add salt to taste, pepper powder. Bring to a gentle boil ,

Easy veg croquettes recipe

 A yummy and tasty snack Recipe,which can be made instantly, with veggies of your choice.Smart way to introduce veggies to kids!!! Ingredients: Chopped Onion 50gms  Chopped cabbage 50gms  Chopped carrot 50gms  Chopped beetroot 50gms  Add any other leftover veggies,or veggies of your choice Ginger garlic paste 1tbsp  Salt to taste  Oil for frying  Cornflour 2 tbsp Maida 2 tbsp Chilli flakes 1tbs Preperation Method: In a large bowl mix all the ingredients, don't add water.Mix into a smooth dough. Make even sized balls of the veggie mixture.If required refrigerate the mix for 30 mins(optional) Heat oil in a pan, keep medium heat,add the veggie balls deep fry until golden brown. Laddu Recipe

All time favourite Indian sweet Laddu recipe Ingredients  For laddu mix: Besan/gram flour 1cup Salt 1pinch  Water as required  Turmeric powder 1/4tsp Ghee for frying 1cup For sugar syrup: Sugar 1 cup Water 1/2 cup Cardamom powder 1tsp Saffron few strands Melon seeds 1tbsp  Method: For making laddu mix: Add 1cup besan in a bowl,seive, mix with salt,turmeric powder and water.Make a smooth runny batter without lumps Heat a frying pan,add 1 cup ghee or oil. When ghee is hot pour the batter like strings into the oil.keep medium flame, fry until crispy and golden brown. Remove and keep aside,Fry the entire batter into crispy bits Blend the fried crisps into a coarse powder.keep aside.  Method For sugar syrup: Heat a pan,add sugar and water.Melt in medium flame, strain and cook the syrup for 10-15 minutes on medium heat, keep stirring continously.Press a small drop of sugar syrup between your fingers and pull for a single thread consistency. When sugar syrup reaches this stage,swich off flame

Cucumber 🥒 Raita

 Beat the summer heat with this cooling,Probiotic cucumber Raita Recipe.  Ingredients: Grated cucumber  250gms  Grated coconut  1tbsp Oil 3 tsp Mustard seeds 1tsp  Urad Dal 1tsp  Green chilli  1 Dry red chilli  1 Chopped Curryleaves,  Coriander and mint  }       1tbsp Leaves Fresh Curd 1cup Jeera 1tsp  Salt to taste  Recipe video link: Method: Heat oill in a pan, add mustard seeds, jeera, urad dal.saute until mustard seeds splatter.  Add Dry Red chilli, green chilli, Chopped greens,sauté few mins. Switch off flame, add Grated fresh cucumber, Grated coconut, salt to taste. Mix well. Add fresh Curd, mix well. OLAN

 Olan is a mild stew of pumpkin and black eyed beans,cooked in coconut milk .spices are mild just green chilli and ginger.olan recipe belongs to kerala cuisine,it's an essential part of their festivities. A special mention would be that my olan recipe was chosen as winning recipe in kerala International cuisine cooking competition 2021.It was an online competition where participants from across the globe participated.  Ingredients: Red/white pumpkin 1cup Fresh coconut milk 1cup coconut oil 1tbsp salt to taste  Boiled Karamani/blackeyed beans Green chilli 3 Crushed ginger 3inch piece Video Recipe link:

Badusha/Balushahi

 Flaky,melt-in-mouth Badusha sweet dish  Ingredients : For Badusha: Maida/Allpurpose flour 2cup Salt 1pinch Ghee 3tbsp Fresh Curd 3tsp Baking soda 1/2tsp Ghee/oil for frying For sugar syrup: Sugar 2cups Saffron 1 pinch Lemon juice 1tbsp  Method For Balushahi dough: Mix maida with salt,Baking soda, curd,Ghee into a curmbly dough with adequate water. Donot over knead the dough.Rest the dough for 30-45mins. For sugar syrup: Boil sugar in a thick bottomed pan with 1 glass water.Boil in medium flame for 20 minutes. When sugar reaches single thread consistency, add Saffron, lemon juice.switch off flame ,keep syrup warm .Addition of lemon juice prevents formation of crystals in sugar syrup.  Heat oil/Ghee for frying .keep very low flame . Divide the badusha dough into small portions ,press In center.Fry the balushahi in very low heat.Try and maintain the temperature in the same low heat. When Badusha turns light golden brown remove and soak in warm sugar syrup. Remove and serve after 10 minut
