Ingredients
For laddu mix:
Besan/gram flour 1cup
Salt 1pinch
Water as required
Turmeric powder 1/4tsp
Ghee for frying 1cup
For sugar syrup:
Sugar 1 cup
Water 1/2 cup
Cardamom powder 1tsp
Saffron few strands
Melon seeds 1tbsp
Method:
For making laddu mix:
Add 1cup besan in a bowl,seive, mix with salt,turmeric powder and water.Make a smooth runny batter without lumps
Heat a frying pan,add 1 cup ghee or oil.
When ghee is hot pour the batter like strings into the oil.keep medium flame, fry until crispy and golden brown. Remove and keep aside,Fry the entire batter into crispy bits
Blend the fried crisps into a coarse powder.keep aside.
Method For sugar syrup:
Heat a pan,add sugar and water.Melt in medium flame, strain and cook the syrup for 10-15 minutes on medium heat, keep stirring continously.Press a small drop of sugar syrup between your fingers and pull for a single thread consistency. When sugar syrup reaches this stage,swich off flame,add cardamom powder, saffron and keep aside.
Add the ground laddu mix powder to the sugar syrup. Mix evenly. Toast 1tbsp melon seeds in some ghee,add it to laddu mix.
When the mix is warm,start rolling laddus.Decorate and enjoy.
