Laddu Recipe




All time favourite Indian sweet Laddu recipe


Ingredients 

For laddu mix:

Besan/gram flour 1cup

Salt 1pinch 

Water as required 

Turmeric powder 1/4tsp

Ghee for frying 1cup

For sugar syrup:

Sugar 1 cup

Water 1/2 cup

Cardamom powder 1tsp

Saffron few strands

Melon seeds 1tbsp 


Method:

For making laddu mix:

Add 1cup besan in a bowl,seive, mix with salt,turmeric powder and water.Make a smooth runny batter without lumps

Heat a frying pan,add 1 cup ghee or oil.

When ghee is hot pour the batter like strings into the oil.keep medium flame, fry until crispy and golden brown. Remove and keep aside,Fry the entire batter into crispy bits

Blend the fried crisps into a coarse powder.keep aside. 

Method For sugar syrup:

Heat a pan,add sugar and water.Melt in medium flame, strain and cook the syrup for 10-15 minutes on medium heat, keep stirring continously.Press a small drop of sugar syrup between your fingers and pull for a single thread consistency. When sugar syrup reaches this stage,swich off flame,add cardamom powder, saffron and keep aside.

Add the ground laddu mix powder to the sugar syrup. Mix evenly. Toast 1tbsp melon seeds in some ghee,add it to laddu mix.

When the mix is warm,start rolling laddus.Decorate and enjoy.

  Kara Bhoondhi and Meeti Bhoondi Hot and sweet combo of Bhoondhi Ingredients For meeti bhoondhi Ghee for frying Besan/ chickpea flour 1 cup Sugar 1/2 cup Elaichi 3 Kesar few strands For kara Bhoondhi Besan/chickpea flour 1 cup Oil for frying Salt to taste Red chilli powder 1 tsp Asafoetida 1 pinch Method For Meeti Bhoondi Mix besan with water and make a batter to pouring consistency.Heat ghee in a pan ,keep medium flame.Pour a laddle of batter onto a bhoondhi laddle or grater into the hot ghee.Note that the ghee should be very hot while frying. Fry till slightly golden brown. For jeera boil sugar in 1 glass water.Boil for 10 mins after the sugar completely dissolves.The syrup should be very sticky and thick.Add cardamom powder,squeeze half a lemon into the syrup. This step avoids formation of sugar crystals. Add a few saffron strands to the warm syrup. Beets soup

  Beets soup Beets soup made with winter vegetables like beetroot, carrots  🥕 cozy warm soup for chilly winters are great ways to boost Immunity. Tasty homemade soups are perfect binging options ,filling and healthy!!! Ingredients: Beetroot  1 small Carrot 1 small Onion 1 small Bay leaf 1 Garlic 5 cloves  Butter 1 tbsp Salt to taste  Pepper powder 1tsp  Peppercorns 10nos. Tulsi/Basil leaves few (optional) Water as required  Coriander stem few  Method: Chop the veggies  Heat a pan, add butter ,when butter melts add garlic,bayleaf stir few minutes until raw smell goes. Add onion, sauté until pink. Add beetroot, carrot,coriander stems,Peppercorns sauté few mins. Add 2 glasses of hot water.cook with lid closed,until veggies are soft.Add Tulsi leaves now. Strain the veggies from the broth. Remove bayleaf, grind the soup mix finely. Strain the soup mix, add to a pan along with the broth. Adjust the consistency of the soup with water,add salt to taste, pepper powder. Bring to a gentle boil ,

RASMALAI

  A decadent Bengali dessert..... rich, creamy melt in mouth softness.... treat your loved ones with homemade rasmalai!!!! Ingredients For Rabdi Milk(full cream) 1litre  Sugar 1/4cup Dry fruits(almonds, cashewnut, pista) 1/4cup Saffron strands soaked in warm milk  Cardamom powder 1tsp For panneer patties  Milk (full cream) 1litre  Sugar 3/4 cup Rose water 1/2tsp Vinegar/lemon juice Method  For rasmalai panneer patties  Homemade panneer  Homemade paneer is preferred,crumble and knead the paneer to a smooth creamy dough.Make small patties and cover with a moist cloth and keep aside. For sugar syrup add 3cups of water to 3/4 cup sugar and bring to boil in a pan,after sugar dissolves completely let it boil for another 10 mins. Panneer patties  Now add paneer patties to the sugar syrup( do shape the paneer once more in your palm  before dropping in sugar syrup so as to remove any cracks). Boil paneer  in sugar syrup over a medium flame for 20 mins minimum with lid closed.check for water aft

Chocolate Mousse

 Creamy,pillowy chocolate mousse no egg,cream,with just two ingredients chocolate and water. Ingredients Chocolate 300 gms Water 150 ml Method Measure out 300 gms of compound chocolate,add 50%water 150ml.Ratio of chocolate to water is very crucial to get a airy mousse. If using dark chocolate add 60%water to melt the chocolate,if using dairy milk chocolate add 70%water to melt the chocolate. If there is excess water then you will have a chocolate sauce,less water will cease the chocolate. Melt the chocolate in a double boiler .keep a vessel filled with warm water below your chocolate pan and simmer the water to melt the chocolate.  Simmer till all the chocolate melts and just forms a uniform mixture.switch off the flame immediately.Do no overcook the chocolate. Cool the chocolate mixture to room temperature,keep a ice bowl below the cooled mixture and whisk till soft peaks are formed. Set the mousse in a fridge for 30minutes . Easy veg croquettes recipe

 A yummy and tasty snack Recipe,which can be made instantly, with veggies of your choice.Smart way to introduce veggies to kids!!! Ingredients: Chopped Onion 50gms  Chopped cabbage 50gms  Chopped carrot 50gms  Chopped beetroot 50gms  Add any other leftover veggies,or veggies of your choice Ginger garlic paste 1tbsp  Salt to taste  Oil for frying  Cornflour 2 tbsp Maida 2 tbsp Chilli flakes 1tbs Preperation Method: In a large bowl mix all the ingredients, don't add water.Mix into a smooth dough. Paneer kothu chapati Paneer kothu chapati...... spicy,tangy rotis cut into pieces and mixed and tossed with paneer masala gravy,with butter and Vegetables of our choice. Ingredients For making roti/chapatti Wheat flour 2 cup Flax seeds flour 1/2 cup Salt 1 tsp Oil 1 tbsp For making paneer sabji Paneer 250 gms Chapatti/roti 6 Onion 2 Tomato 3 Capsicum 1 Salt to taste Roasted dhania powder 1 tsp Roasted jeera powder 1/2 tsp Ginger garlic paste 1 tsp Greenchilli 3 Dry Red chilli powder 1 tsp Garam masala powder 1 tsp Butter 2 tsp Oil 2 tbsp Coriander  Tumeric powder 1 tsp Method For roti Mix wheat flour with flax seeds flour , add salt,oil and make a soft dough.Rest for 15 mins and make chapatti.Flax seeds flour is optional.  For paneer sabji For paneer masala gravy heat oil and butter in a pan add mustard seeds,after splatter of mustard seeds add chopped onion, Ginger garlic paste, green chilli chopped and saute till onion becomes translucent. Now add diced capsicum, tomatoes,  scrambled
