Mixed veg sweet corn soup

  A warm bowl of sweet corn soup with mixed veges.... comforting,filling and therapeutic for cold winters. Ingredients Mixed vege 1 cup (Beans, carrot, cabbage) Sweet corn 1/2 cup Coarsely ground sweet corn paste 1 tbsp Corn flour 2-3 tbsp Butter 1tbsp Salt to taste Pepper powder 1 tsp Bay leaf 1 Method Heat a large pan add 1 tbsp butter,add bay leaf,add the veges.Saute for few minutes,add sweet corn and saute for 5minutes.keep medium flame. Now add 1 litre water into the veges and bring to a boil. Simmer for 10 mins till all the flavours of the vegetables are released into the water.It will become a vegetable stock. Add the sweet corn paste to the vegetable broth.This enhances the sweet corn flavour of the soup. Boil for few more minutes.Add Salt to taste and pepper powder,mix thoroughly and adjust the consistency of the soup with water if required.Mix corn flour with some water and make a slurry. Aloo methi paratha

 Aloo Methi Paratha...first winter dish,fresh Methi leaves chopped and mixed with atta ....stuffed with spices and potato filling!!! Nutritious Paratha on the go!!! Ingredients Whole wheat flour 2cup Salt to taste Water for kneading Chopped methi leaves 1 cup Ginger garlic paste 1tbsp Garam masala powder 1 tsp Ajwain seeds 1/2 tsp Chopped green chilli 1 tbsp For aloo filling Boiled potatoes 1 cup Salt to taste Red chili powder 1 tsp Ginger garlic paste Garam masala powder 1 tsp Amchur powder 1 tsp Turmeric powder 1 tsp Method Mix whole wheat flour with spices and water to make a soft dough. Let the dough rest for 30 minutes. For the Aloo stuffing ,mix boiled potatoes with all the other ingredients and mash to coarse dough. For making the Paratha,roll out a small roti,fill it with some aloo stuffing.Close  and roll out the Paratha slightly thick. Khuskhus/poppy seeds Halwa

  Ingredients Khuskhus/poppy seeds 250 GM's Sugar 3/4 cup Ghee 5tbsp Cashewnut 1tbsp Milk 500 ml Method Soak khuskhus overnight.Grind to a smooth paste. Heat a heavy bottomed pan ,add the khuskhus paste,saute till water evaporates. Add milk and saute till water evaporates.keep medium flame. kara Bhoondhi and Meeti Bhoondi

  Kara Bhoondhi and Meeti Bhoondi Hot and sweet combo of Bhoondhi Ingredients For meeti bhoondhi Ghee for frying Besan/ chickpea flour 1 cup Sugar 1/2 cup Elaichi 3 Kesar few strands For kara Bhoondhi Besan/chickpea flour 1 cup Oil for frying Salt to taste Red chilli powder 1 tsp Asafoetida 1 pinch Method For Meeti Bhoondi Mix besan with water and make a batter to pouring consistency.Heat ghee in a pan ,keep medium flame.Pour a laddle of batter onto a bhoondhi laddle or grater into the hot ghee.Note that the ghee should be very hot while frying. Fry till slightly golden brown. For jeera boil sugar in 1 glass water.Boil for 10 mins after the sugar completely dissolves.The syrup should be very sticky and thick.Add cardamom powder,squeeze half a lemon into the syrup. This step avoids formation of sugar crystals. Add a few saffron strands to the warm syrup.
