Grains of basmati rice soaked and cooked with spices,paneer.corn......aromatic marination of paneer with spices adds to the subtle taste and flavours!!!!
Ingredients
Basmanti rice 1 cup
Paneer 200 gms
Boiled sweet corn 1/4 cup
Onion 1
Ginger garlic paste 3 tbsp
Coriander 2 tbsp
Mint leaves 2 tbsp
Salt to taste
Garam masala 1 tbsp
Cinnmom 2inch piece
Cardamom 3
Saunf 1tsp
Cloves 4
Star anise2
Bay leaf 2
Javitri 1
Saffron 1pinch
Green chilli 3
Curd 1/4 cup
Tumeric Powder 1/2 tsp
Dry red chilli powder 1/2 tsp
Dhania powder 1/2 tsp
Jeera powder 1/2 tsp
Oil 3 tbsp
Ghee 1 tbsp
Method
Marination of paneer
Dice the paneer into cubes,add curd, dhania powder,jeera powder,tumeric Powder, little salt,garam masala powder,red chilli powder, ginger garlic paste and let it marinate for a minimum of 30 minutes.(prefer to marinate overnight if possible)

Parboiled basmanti rice
Cook basmati rice in a kadai of boiling water,along with whole spices that is cardamom, cinnamon,bay leaf,javithri,star anise, cloves until the rice is 75 % cooked.Drain the excess water keep the rice aside.

Paneer gravy preperation
Heat oil in a kadai,add cloves, cardamom, cinnamon,star anise,bay leaf, saunf, javitri and saute for few minutes till flavours are released.
Add chopped onion and saute till they become translucent,add the marinated paneer,corn and saute till oil seperates.

Now layer the rice and paneer gravy alternatingly in a rice cooker vessel or any vessel you prefer to cook your rice and add salt to taste, ghee , saffron, garam masala powder chopped coriander and mint leaves.
Cover the lid with a muslin cloth or aluminum foil,to make it air tight.This method of cooking is called giving dum.It ensures all flavours are properly enhanced and gives a rich , aromatic biryani.
