Nuna vankaya pulusu
Brinjal stuffed with masala simmered in a tamarind gravy,small onions and garlic add to the marination , aromatic,spicy gravy #pulusu.
Syncs well with any food palate.

Ingredients
Brinjal 250 gms
Chopped Onion 150 gms (prefer small onion)
Garlic cloves 5-6
Salt to taste
Curryleaves
Coriander leaves
Mustard seeds 1 tsp
Urad dal 1 tsp
Bengal gram dal 1 tsp
Asafoetida 1 pinch.
Tumeric powder 1/2 tsp
Oil 3 tbsp
Tamarind pulp 2 tbsp
Jaggery 1 tsp
For masala
Onion 2
Garlic cloves 5-6
Coconut 3 inch piece
Salt to taste
Dry Red chilli powder 2 tbsp
Dhania seeds 1 tbsp
Method
Grind the masala to a smooth paste and keep aside.
Heat oil in a pan add mustard seeds urad dal bengal gram dal for tempering,add oinon , garlic, Curry leaves, coriander leaves and sorte for few minutes.
Slit brinjal upto3/4 th length wise but keep them together at top ,calyx part ,stuff the Brinjal with masala,and add to the pan and saute for few minutes.
Add the remaining masala to the pan and saute till oil seperates.Add water to adjust the consistency to gravy/pulusu along with tamarind pulp, turmeric powder, asafoetida,salt, jaggery.simmer the pulusu with lid until the brinjal and onion are softened for 10 -15 mins approximately and oil seperates.your pulusu is ready to enjoy.
