A warm bowl of sweet corn soup with mixed veges.... comforting,filling and therapeutic for cold winters. Ingredients Mixed vege 1 cup (Beans, carrot, cabbage) Sweet corn 1/2 cup Coarsely ground sweet corn paste 1 tbsp Corn flour 2-3 tbsp Butter 1tbsp Salt to taste Pepper powder 1 tsp Bay leaf 1 Method Heat a large pan add 1 tbsp butter,add bay leaf,add the veges.Saute for few minutes,add sweet corn and saute for 5minutes.keep medium flame. Now add 1 litre water into the veges and bring to a boil. Simmer for 10 mins till all the flavours of the vegetables are released into the water.It will become a vegetable stock. Add the sweet corn paste to the vegetable broth.This enhances the sweet corn flavour of the soup. Boil for few more minutes.Add Salt to taste and pepper powder,mix thoroughly and adjust the consistency of the soup with water if required.Mix corn flour with some water and make a slurry.
